Why Charcoal Type Matters for Your BBQ
Not all charcoal is created equal. The type you choose affects heat output, burn time, smoke flavor, and how much ash ends up in your grill. Understanding the difference between briquettes and lump charcoal can genuinely improve your results.
Briquettes vs Lump Charcoal
Briquettes are compressed charcoal mixed with binders and sometimes additives. They light easily, burn at a consistent temperature, and last a long time — typically 45 to 60 minutes at cooking heat. That predictability makes them ideal for beginners or longer cooks like ribs and whole chickens.
Lump charcoal is made from real hardwood burned in a low-oxygen environment. It contains no additives, lights faster, burns hotter, and produces less ash. The downside is inconsistency — irregular shapes mean airflow varies, and temperature can spike or dip.
When to Use Each Type
- Briquettes: Low-and-slow cooks, beginners, any session over 90 minutes
- Lump charcoal: High-heat searing, quick weeknight grilling, when you want cleaner smoke flavor
- Blending both: Some pitmasters mix them to get the heat of lump with the lasting power of briquettes
Lighting Without Lighter Fluid
Lighter fluid works, but it can leave a petroleum taste if the coals are not fully ashed over before cooking. A chimney starter is a far better tool — stuff newspaper in the bottom, fill with charcoal, and light. In 15 to 20 minutes you have a full chimney of glowing, ash-covered coals with no chemical taste.
Ash Management
Heavy ash buildup restricts airflow and lowers your cooking temperature. After every session, let the grill cool completely, then clear out the ash. Proper airflow is how you control temperature, so keeping vents and the ash catcher clear is essential maintenance.
Storage Tips
Charcoal absorbs moisture quickly. Store bags in a dry location — a shed or garage works, but never leave an open bag outside. Damp charcoal lights poorly and produces excessive smoke before it gets going.
